Baked Tortilla Broccoli Forest

So simple, cheap and easy to make in a rush, even the kids will enjoy creating this one with you!

This is a fabulous way to use up the rest of that ‘quick and easy after school pasta sauce’ you have left over. If you don’t have any, search for the recipe in the Kids section, or, if you can’t be arsed to make it, you can just use any old tomato based sauce you can find in the cupboard!



Quick and easy after school pasta sauce

1 Tortillia

Broccoli Florets

Nooch (Nutritional Yeast)


Pre-heat your oven to 180c and chop your Broccoli into pretty little Oak trees! Now, we are going to part cook these, but you need to be careful not to fully cook them, otherwise you will ruin your little forest and break your children’s hearts, leaving all of you crying in heap on the floor, unable to stand up. You don’t want to be responsible for that, do you?

Drain them and set them aside on a tea towel or some kitchen paper and lets get our forest floor ready! Get a little casserole dish and gently push your Tortilla down to form the shape you want, be careful with your stabby stabby fingernails, if you puncture it, all your sauce will end up leaking underneath and making it soggy. Pour in your sauce and smooth it out.


Sprinkle your Nooch all over the top so it looks like cheesy yellowy soil. Yes, ok… kinda like sand I guess, but I’m not going to say that because you don’t get sandy oak forests and it will just ruin my whole idea so hush with your judgmental sandy obsessions!


Now you can get the kids to arrange the Broccoli to look like a SOILY forest! They will enjoy doing this, and it shouldn’t take too long. Once they are done and they have gone back to playing Pirates, rearrange it all so it looks 10 times better… sshhh they’ll never know, and your OCD will chill the heck out!


Into the oven it goes! 20 minutes should do the trick, then you can either chop it up in the dish and scoop it out, or lift the whole thing out and chop it into portions on a plate if you find it easier.


Yummy! Job done in no time. This is now edible, so get the kids to eat it.
