Living a healthy lifestyle doesn’t mean you need to give up Curry night. Far from it in fact! Currys can be the most nutritious type of meals you can get… if you do it right. The whole family loved my take on Tikka Masala, even my 14 month old! If you like your Curries to be hotter, just add more Chillies either to the Paste, or the Sauce when you add the beautiful little Chickpeas. You can use shop bought Tikka Paste, but it’s so much better if you make your own, it’s easier than you think too! Here is the recipe for the Paste:
This recipe is amazingly simple and the result is bloomin’ marvellous! You can freeze it for a quick work lunch option when you have been less than organised… or something to heat up after a busy day.
Weird Vegan Lady’s Tikka Masala Paste
400ml Coconut Milk
1 tin Chickpeas
1 White Onion
1 Red Pepper
10 Baby Plum or Cherry Tomatoes
1 TBSP Tomato Puree
Righto! Let’s get on with it, prepare your lovely Chickpeas by draining the liquid and rinsing them, slice your Tomatoes in half, Chop up the Pepper and dice Mr Onion Face. Simple. Add a little Coconut oil to a non stick pan (a wok is perfect) over a medium heat, and throw in the Paste, Onion and Tomatoes. Keep stirring and squidging it all together until the Tomatoes have broken down. If you like, and you’re fussy like me, you can now easily pick out the Tomato skins. If you don’t mind them, then leave them… obviously!
Then simply add the rest of your ingredients, allow it to sit and simmer for a few minutes between stirring.
You’ll need to let it thicken and reduce by at least half, until you have a deliciously sumptuous Sauce!
Serve with Rice and some Samosas if that’s your thing, shove it in your gob!
