3 Bean Chilli

Cor blimey guv’ this is goood! With enough for 4 adults, you can freeze some leftovers, or use it for the next day. You can have this with Rice or Quinoa, use it in a Burrito or why not switch it up and use it in my Chilli Bean Tortilla Cups? But right now, let’s focus on making our essential 3 Bean Chilli!


1 tin Pinto Beans
1 tin Red Kidney Beans
1 tin Blackeyed Beans
200ml Vegetable Stock
1 Garlic Clove
1 TBSP Tomato Puree
1 tin Chopped Tomatoes
1 White Onion
1 TBSP Chilli Powder
1 tsp Cumin
1 tsp Coriander
1 tsp Paprika
1 tsp Oregano
1/2 tsp Cinnamon

Drain and rinse all of your Beany Babies and put them in a pretty pattern if you fancy it, it won’t make them taste any better, but it makes life fun! Dice Mr Onion Face, mince the Garlic and mix your Spices.

Now were are ready! Plop some Coconut Oil (or any tasteless Oil you have) into a pan and get the Onion in over a medium heat. Once it’s softened, add your Spices, Tomato Puree and Garlic to the mix. Prod and swoosh them around for a couple of minutes. Carefully lean over the pan, close your eyes and tilt your head back a bit, and with a serene and gentile look on your beautiful face, waft the smells up at your nose. Keep the wooden spoon in your wafting hand to really feel like you’re the awesome rat in Ratatouille. Everyone pretends they’re in films sometimes right? Just me? Ahem… Moving on…

You’re going to add your Stock. It will fall into the pan with a lovely simmering sound! Stir it every minute for roughly 10 minutes to let it reduce a tad.

Now add the Chopped Tomatoes, stir and let it bubble gently for 8 more minutes. This is bloody easy right!?

Guess what goes in next? That’s right… BEANS! My toddler laughs every time I say ‘Beans’. I honestly don’t know why… but we now have a ‘thing’ where I follow her around saying ‘Beans’ in various different voices, accents and volumes until she is giggling all over the shop. Yes. Weird Vegan Lady has a Weird Vegan Baby. What did you expect?

Anyway, Beans are goin’ in! Mix ’em up and stir ’em round.

Let it cook for about 5-10 minutes, and then you have a decision to make! Hmm intriguing… you can either be a patient cook, and let this thing reduce a bit more, or you can be impatient and pop in a bit of Cornflour? I am impatient myself! You can use normal flour too, or gluten free.

Once thickened, we are done! Woohoo! Devore the Beany goodness, and then sleep in separate bedrooms because… yikes.
