Lemon Lime Lentil Linguine

First impressions… super pretty lookin’ dish huh? Well it tastes pretty sexy too! It doesn’t take much effort, it fills you up and cleans the dishes when you’re done.

Ok, the last point wasn’t 100% true. But you knew that because you, my friend, are a clever clogs. Now lets cook it.

1 White Onion
1 Garlic Clove
1tsp Chilli Flakes – optional
1/2 the juice of 1 Lime
1/2 the juice of 1 Lemon
100g Frozen Peas
100g cooked Puy Lentils
3 heaped TBSP Oatly Creme Fraiche
Black Pepper
Lemon and Lime Zest – Optional

Serve with Linguine.

This is quite clearly a Linguine dish, so get your pasta on the go and then get down to business.

The first thing we always do is… chop Mr Onion Face, mince the Garlic too and then gently soften them in a frying pan on a medium heat with a touch of coconut oil, or any other oil you have. Move it around a bit while you’re singing along to Radio 2, or reciting an old poem from the Tudor era. Totally up to you.

Once the Onion has a few little signs of browning, turn the heat off completely and immediately add your Frozen Peas and Chilli Flakes if you’re using them. You need to do the rest of the recipe fairy quickly to keep it nice and warm. Swish them around with the Onion and Garlic so they can get to know each other, and take the chill off the perfectly plump Peas. Then season with Black Pepper.

Next, simply add the rest of your ingredients, and swishy swoosh them all together! Yum! When the citrus juices combine, they smell is amazing! So have a good sniff! Add your ‘still hot’ Linguine and sprinkle some zest on top if that’s your thing. I like it, so i did!
